The team at Isabel's in Poole have put three things together that we associate with Valentine's to put together something that your loved one will be blown away with, even if you can't make it in to eat it at the restaurant this Valentine's day!
Serves 6
Ingredients:
Brownie:
275g Dark chocolate (54-70% cocoa content)
225g Butter
400g Caster sugar
200g Plain flour
5 whole eggs
Sauce:
125ml water
125ml Champagne
500g White chocolate
250g Caster sugar
Method:
Brownie:
Place the chocolate, butter and sugar into a mixing bowl over simmering water to melt the butter and chocolate, then add and dissolve the sugar.
Whisk in the flour, which in turn should cool the mixture enough to add the eggs.
Butter and sugar 6 x 3 inch rings and add the mix to 3/4 full. Place in the middle of the oven and bake on 170c for around 40 minutes. They should rise like a cake and at their best while still soft in the centre.
Sauce:
Place the water, champagne and sugar into a saucepan on the stove until the sugar has dissolved. Reduce by 1/4 and remove from heat. Stir in the white chocolate until melted and smooth.
Serve the brownie on a plate with two sliced strawberries. Drizzle the sauce around the brownie and add some caster sugar over the brownie. You can serve warm and reheat later in the microwave if you wish. You should store it in the fridge if you wish to make it beforehand.
