‘What you read on the menu is what you get, I believe in using the best seasonal ingredients that budgets allow and letting the flavour of the ingredients speak for themselves.’ Andy Waters

Using old school techniques enhanced with modern methods, Andy Waters’ classical style has earned him high praise and acclaim throughout his career along with numerous coveted awards.

Now head chef at Pebble Beach in Barton-on-Sea, Andy’s passion for food first started from being around his mother, a confectioner. At a young age he began training at Halesowen Food College, moving on to many highly respected UK restaurants in the UK and Europe, working alongside top chefs including Paul Bocuse, Jean Christophe Novelli and Andreas Antona.

Head Chef at the Bay Tree Restaurant in Harborne, Andy decided it was time to venture out on his own. In 2002 with the support of his family, Andy first opened Edmunds restaurant in the Warwickshire town of Henley in Arden.

Andy’s approach to cooking soon attracted national interest resulting in the awarding of a coveted Michelin star within six months of opening and being named as Hardens' restaurant of the year, an award sponsored by Remy Martin.

In 2010 Edmunds was voted a Sunday Times top 100 UK restaurant, described as ‘a modern and relaxed venture winning an ever-higher profile, thanks to its top-quality cuisine.’ In 2012, The Good Food Guide named Edmunds ‘the best restaurant in the Midlands’.

A Worcestershire boy born and bred, Andy moved to The Queens in Belbroughton, Stourbridge, with his award winning team in March 2012. Shortly afterwards he was awarded the prestigious Robert J Smith Award by the British Culinary Federation, for professionalism and dedication to the industry.

Andy is currently one of the UK top chefs who create original recipes for the award-winning site, Great British Chefs. He took part in its Cooking with Kids Programme to encourage children to make delicious, healthy food from scratch with their parents using exclusive recipes, virtual masterclasses, cookery guidelines and a brand new app.

The initiative was championed by Tesco Real Food and Andy’s recipes can be found at realfood.tesco.com and greatbritishchefs.com
